the drink. People add butter,
coconut oil, or MCT oil. Sometimes
we add heavy whipping cream.

As long as eggs are not washed or refrigerated they will last for weeks without refrigeration. When a hen lays an egg there is a protective covering over it that is removed by washing or getting wet (ie when an egg is removed from a fridge in a store and carried home condensation will tend to form on the shell, therefore washing off the protective layer). Within the EU it is illegal to wash eggs or refrigerate them before sale, therefore it is relatively easy to find eggs that will last a month or more. I believe that eggs in the US have to be washed prior to sale and therefore are more likely to need to be kept in the fridge.

I am in a similar boat; low carb paleo. Sardines in olive oil are good. Fresh fish and shellfish. I have a fair amount olive, coconut and avocado oil on board. Nuts and dark chocolate are great and keep forever. Good quality jerky is a great protein source without much carbs.

We have a refer with a freezer section so I have a few more options.

Very difficult to buy unrefirgerated eggs. Certinaly none in supermarkets. Many islands dont produce enough to sell.

I dont have any problems storing them for a while never needed to for more than a month. and dont use vasaline/varnish etc (what a boring job that would be!) just break them into a cup individualy so you cathc to off ones.

Unless Denmark, Sweden, Germany and several other countries all have loads of supermarkets that break the law, then refrigerating eggs is not illegal.

Having said that, an unwashed, unrefrigerated egg, that is turned every day will last almost indefinitely, even in the tropics. Just keep it out of the sunlight

when we do not go to gringo matkets, the eggs are not washed nor refrigerated here. they last 3 weeks in summer, then they are done flat all water, yolk immediately breaks...nasty.

Maybe not illegal but definitely against EU Commission no 589/2008 which directs how eggs should be managed and marketed within the EU to reduce the risk of salmonella and other bacterial infestations.

I tried to add a link to the directive but I can't work out how to. Googling 'commission no 589/2008' brings up the directive in pdf form.

Many supermarkets here in Greece also refrigerate their eggs. I think the small shop keeper genuinely doesn't realise and that's how things have always been done so that's how he'll continue. We also frequently see them spraying fruit and vegetables in the summer to make them look fresh - the turnover is often so slow that the produce sits and rots in the pools of water on the shelf.

We have bought refrigerated eggs from the grocery store and stowed on board without refrigeration or sealing for about 2 months as we traveled the Bahamas.
