I do find it interesting to note so many people here keep opened mayo at room temp. Would have never accrued to me.

The fact so many do it, shows to some degree it is possible. It would not be possible for me to try it. But for some, it is working so far. Interesting how life goes. Who would thought there would be such lively debate over mayonnaise on a sailboat forum. Google spiders may blow fuses trying to classify these posts. Lol

Also of possible interest, I prefer Miracle Whip!

Potato chip dip.


Package of cream cheese
Couple big spoons of Miracle Whip
(Double dipping means autoclaving spoon) lol
Package onion soup mix

Stir and enjoy.

Serve cold, unless you are on a boat in the middle of nowhere.

Miracle Whip is emphatically NOT mayonnaise. Like the other strange processed food products (velveeta etc) mw likely has an extended shelf life.

Seriously, I keep our refrigerators so cold, ice develops in some items like orange juice and bottled water. In that environment, I throw away mayo that is a couple months old. I prefer something fresh over something with miles on it.

By the way, salmonella follows a very specific pattern. The people get sick five - six hours after eating something that is spoiled in that way. I had tuna salad made with my older, room temp mayo yesterday around 1pm. It's 22 hours later and I'm not sick.

However, I did put the leftover tuna salad in my cooler. With tuna in it, it WILL spoil quickly.

It's not the mayo. It's what you put in the mayo.

take to local favorite laboratory for testing for bacteria and fungi....
read results
buy small use fast...LOL

I'm just sayin' -- mine lasts 3 - 4 months EASY. My MIL's even longer. You can put anything you want in a petri dish, but many factors decide what actually grow in that petri dish, including how clean the glass was, whether the tester scrubbed up and used gloves, how clean the air was, what they used to gather the mayo, etc. Just because you grow something in a petri dish doesn't mean the source was what you planted the petri dish with. Mother nature has a penchant for growing things any time it can.

I'm helping a friend with a boat he bought in Miami. It was inches from the junk yard when he bought it. We've managed to rebuild it satisfactorily to sail it back, but hadn't sealed ALL the leakes yet before Isaac pounded the area with squalls for three days.

We came back, and because we had used "mildew root penetrator" (from the supermarket) on all the surfaces, (HALLELUJIAH!!!) all the mold hadn't grown back.

However, he had left a pair of old flip flops on board, and one of his shoes actually had a seedling sprouting out of the soul -- three leaves on long stems and a long tap root! It was ready to be transplanted!

That's Mother Nature "seeding the Petri dish." We really thoroughly cleaned and sanitized that boat, but something still managed to grow.

Petri dish experiments are useless and misleading except under tight laboratory conditions.

.......anyway, everyone seems to be missing the point - cool Mayo tastes better .

G'Day RAku,

Are you saying that there is a product that really stops mold growth available from your supermarket?? I would love to know it's name and if possible, what the active ingredients are (since down here in the south many Yank products are not available).

Such a product would be a blessing even more valued than salmonella-proof mayo!

flamer--was teaching ye how to grow the bacteria from the bottle of mayo, not that it only lasts that long--please READ the posts which you attempt to answer.
i would NEVER use same mayo for 4 months, as raw egg in NOT cooked in vinegar and vinegar does NOT kill germs in eggs....i only keep my real mayonnaise 2 weeks max in tropics --and i use smallest possible bottles.

salmonella is REAL and will hurt ye. someone who used to brag about her old aged mayonnaise poisoned a party of 30 with hers, and hers was only 4 months old----was a helluva lawsuit. was a helluva lot of realllly sick folks. enjoy.

I think David has said it all. Mayo does not have to be in the fridge, but it tastes better that way.

And yes ... mayo on chips is great, better than tomato sauce but nothing beats just salt and vinegar.

Hmmm,

I suppose that if you are just scoffing spoonfuls of mayo (gag) that could be true, but really, even on chips it will rapidly reach room temperature and your alleged gustatory advantage will disappear.

And being a Seppo deep down inside, the thought of mayo on chips (instead of ketchup with a good lacing of Habenero chili sauce) is just not on... a quaint but unworthy affectation brought on by separation from civilization.

And the concept of using miracle whip for anything beyond baiting rat traps is disgusting...


CF is indeed an interesting place to hang out!!

I hate this thread!!!! I can't believe that I have read nearly 7 pages about mayo. I feel so dumb! I really need to get a life. I think going to stick to reading the live-aboard dating thread.
