Jedi's Argentinian Beef Soup !

Delicious recipe:

Take a pound of steaks (we use tenderloin because it's affordable where we live) and cut it into bite-sized pieces. Dry it with paper-towel. Put a frying pan or Dutch oven on high heat and add 2 Tbsp of olive oil. While it heats up, grind pepper over the pieces of steak and throw some course (kosher or sea) salt over it. Put meat in hot oil, don't shake or move it, only turn pieces once so that they are nicely browned. Put pan aside.

Take minimum 5 liter pot (1.25 gallon or so) and put on high heat. Empty 4 cans of beef or chicken stock in it. Empty 2 cans of refried beans in it. Empty 2 cans of stewed tomatoes (with the tomato juice) in it (cut tomatoes if pieces are big). Empty a small can of (Mexican) salsa in it. While bringing it to a boil, chop up a large onion, a fist of garlic and 2 big bell peppers and add to pot. Peel and dice a couple of sweet potatoes and add to pot. Simmer until veggies and potatoes are cooked "al dente" (just not fully cooked). Now, lower heat to minimum and add beef + juices (all that is in the pan). Add drained and rinsed small can of sweet corn kernels, drained & rinsed can of pinto/chili beans and drained and rinsed can of black beans. Add Tbsp of dried parsley + Tbsp of dried cilantro (or a fresh bush of each if available). Add tsp of paprika powder and tsp of chili-powder. Bring to a boil while stirring often, then turn stove off and let pot stand with lid for a couple of hours.

Heat to a boil before serving with fresh white bread. Will feed 10 persons but it gets better the next day. Can be kept without refrigerating it for at least 3 days as long as you bring it to a boil every day.

Edit: it even gets better when you add some bacon fried and cut in pieces and/or some original sliced and fried chorizo but my doctor won't allow it

Damn that sounds good. I"m putting that one in my recipe book. I love making big pots of soup or stews, I do it about 3x a month.

The bacon is a must in beef stew or soup, just take a few strips an chop them up and fry them when you brown the beef. Bay leaves too.

its really a stew, Heinz tinned beans are a great taste adder to red meat stews. ( instead of real beans so to speak), I always carry plenty of Heinz aboard.

Lardons or chorizo are really good in this type of thing, Your doctor has no soul! ( PS, you can eat red meat, but not bacon bits?)

Speaking of Chorizo, folks should try my Portuguese fisherman's stew.

The classic version uses bachalao (salted cod) but any firm fish will do. Also shrimp, squid, octopus, anything you've caught. Brown the fish in olive oil and garlic. Throw into a big pot. Cut one or two chorizo sausages into diagonal slices, brown slightly in garlic and olive oil, throw into the pot. Cut whatever root vegetables you have on hand into bite sized pieces, throw into the pot. I use potatoes, onions, turnips, parsnips, carrots. Throw a can of crushed peeled tomatoes (or stewed tomatoes) into the pot. Cook the whole mess slowly, stirring occasionally, for several hours, but remove from heat before the fish starts to disintegrate. Serve with bread.

Definitely better the next day. Will keep 4-5 days if refrigerated.

That must have been "bami goreng". Indonesian food that turned into real Dutch food : can you explain that?

The recipe is simple but needs a packet of special spice mix and marinade... which you can only get in Indonesian and Dutch shops....
