My humble pizza contribution.....CHEESE...it's all about the CHEESE!
Whole milk Moz purchased by the block......NEVER grated in a bag crap! (It's got a coating on it to keep it from sticking together and makes a terrible pizza IMHO)
NEVER skim or low fat stuff....WHOLE MILK is where it's at baby!
Trader Joes has a highly rated whole milk mozzarella cheese.
FRESH buffalo cheese is ok if you don't mind a good tasting SOGGY pizza.
Don't over flour the bottom....I'm not a huge fan of cornmeal, but a little is better than a pizza with flour-ey tasting bottom.
A pizza maker told me to use Romano/ pecorino instead of parmesan
as a topping.
