Hah. Yes you can. one of the advantages of canning is it makes tough meat tender.

It will last a lifetime.
We have one of the smaller models that will "only" process four, one quart jars/tins. (Had to say process and jars/tins for Rustic's benefit.)

This pressure cooker is heavy but it will be passed to future generations. The only way it will fail is if one dropped it just so since it is cast or if one lost the pressure weight and could not get a replacement. Really like the design. It is simple, robust, and easy to use since you can judge the pressure by the jiggling sound of the weight.

Yes, yes, you can "can" horse but first you have to cut, or maybe in this case, beat it, , into "cannable" size.

Two fellows of British extraction were on a motoring tour through the United States when they drove into Iowa. They began to marvel at the endless corn fields. They soon saw a farmer and the driver said, "l am going to pull over and ask that farmer what they do with all this corn."

He got out and asked the farmer, "Excuse me, sir, but what do you do with all this corn?”

The farmer replied in a slight Midwestern drawl, " Well, we eat what we can, and what we can't, we can."

The driver thanked the man and got back into the car.

"Well, what did he say about the corn?" asked the passenger.

"It was quite amusing, really," said the driver. "He said,'We eat what we are able to. What we are unable to eat, we put up into tins.'"
