My oven doesn't have hot or cold spots, but to create steam (which aids in rising) and a chewy crust, I use a Dutch oven. It gets pre-heated within the oven, then the bread is carefully placed inside with the lid on. The lid is removed the last 10 minutes for browning. Food for thought.

Re: Bread making

This is a tasty thread!

I have enjoyed the discussion, and especially seeing the impressive Boat Bread examples.

Fresh Baked Bread is hard to beat on a boat.

But some other baked foods like those pizzas and cakes are wonderful too.

I will add a couple items I baked, just to put some more photos in the mix, and to add something a little different.

A. Rustic Yeast Rolls

B. Yorkshire Pudding
(Yorkies are made with flour, milk, salt, egg)
I can make them Traditional with drippings, savory, or sweet. I enjoy them with Ginger Lemon Curd for a sweet treat. They are delicious when hot out of the oven, warm and soft. The center can be filled with gravy or jam or syrup or fruit. They are "impossible to eat just one" food. Yum!

Re: Bread making

Geeze you guys are fancy. Now I’m feeling embarassed by my simple, boring loafs .

Seriously though, fresh bread is definitely one of the joys of boat life. However you get the job done, from normal yeast in oven, to pan breads, to pressure cooker… it’s all yummy!

An interesting thing about yorkshires, it is the same base recipe as crepes, just panfry in a thin layer.
Of course season them how you want.

Re: Bread making

Dip the outside convex surface of a right-shaped cast iron pan in a bowl of batter for perfectly thin crispy crepes.

You can buy a special one, but I'm allergic to single-purpose gadgets

Re: Bread making

My wife used to bake bread every day when we lived in a boring place, and even made Indian breads while living out of or 77 vw bus around the Med a few years back.... We have a bread machine on board the boat cause it's fun to be able to set it and go swimming or while underway, and since the solar panels run it, no waste of gas.

Re: Bread making

About a decade or so ago, when I was bring my last boat (C&C 25) up to MA from VA she didn't have a proper galley and I succeeded (usually) in producing good meals using a camp stove and a Coleman over the burner camp oven, never tried anything fancy but basic white bread was doable if I chucked it in a hot cast iron, cinnamon rolls and the like in the morning. Goes to prove that you don't need anything fancy.

Re: Bread making

Second the cast iron combo cooker technique. Both sides are useful for other things than breadmaking, it makes for consistent round loaves.

https://www.amazon.com/gp/product/B0...?ie=UTF8&psc=1

Plus, $27 for both sides is also a great deal.

We have a cast iron combo cooker and we find it very useful in the kitchen.

Re: Bread making

Finally got some shots of my Omnia oven in action. Whoever invented the silicone liner should get the Nobel prize. Here is some sourdough becoming a round loaf. (I confess, store-bought dough!) This thing works GREAT on my Origo 3000 alcohol stove, and I can let the kids do it without trepidation. We have made muffins, rolls, croissants (sort of) and a giant round chocolate chip cookie on this last trip.
