Best Canned Meat?

What is your preferred canned beef? Chicken? As I get older, I try to avoid heavily processed foods, so the less chemicals the better.

The reason for the request is that I will be heading out in January for a few months from Ft Laud area to the T&C. Yes I know there are spots to provision, but everywhere I read recommends taking some canned meats.

There will be a healthy supply of Vigo rice (paella) and pasta (to combine with sauteed fish, olive oil, seasonings).

In a preponderance of caution the plan is to cook any vegetables purchased locally- items like tomatoes or peppers-- to avoid food poisoning.

Space is limited and with only 150 watts of solar cooling is also limited to essential items that will not spoil if they get warm (i.e. beer).

Any insights will be appreciated.

Re: Best Canned Meat?

sounds as if you are not leaving civilization too far behind.
canned meats are high in sodium and chemicals for canning commercially. i try to remain away from those.
here in mexico there is a chilorio chata, canned cooked pork in chile. i buuy for crew who like it. i dont. i prefer avoidance if i cannot find fresh.
chickens. pigs, cows and goats run around everywhere here and are consumed.
the meat market is named carniceria. do not expect usa cuts of meat.

i catch what fish are available as i sail/motorsail, and have been fine.

there are many threads on this topic as those who cross oceans need prepare differently than those who do not. a few hundred miles is only a few days, and much of that is within sight and smell and sound of civilization. if fla can be so considered.
my 300 mile passages are 3 pizza passages, as a pizza lasts a day. i supplement with freshest fish and some scattered veggies and canned or bottled salsas.
tuna sammiches are sooo much better with real fresh tuna inside em.

Re: Best Canned Meat?

I use canned chicken (12 oz) and some canned ham and roast beef when I find it cheap enough. I stock up on the ham (small cans, not the bigger tins, and roast beef when it's a deal as finding it cheap is a problem.

I don't add salt to the menu and use half a can per serving which stretches the food budget.

Re: Best Canned Meat?

Which canned meat?

Need you ask? Spam, spam, spam! (an allusion to a Monty Python skit)

If you watch this short video clip, just imagine that the dialog happens on a cruising sailboat, instead of in a diner.

Monty Python's Spam Skit
http://youtu.be/M_eYSuPKP3Y

Spam goes good with eggs, rice, beans. Add a few chunks of canned or fresh pineapple. Throw in some red chile pepper flakes or cook with a can of black beans and flavor with some Smoked Paprika (dry spice) or some Pickapeppa sauce. Yum.

I really would be eating most locally available fish or seafood. Either those you catch yourself or buy from locals (with caution in areas where there is Ciguatera). But, I also know that after eating a lot of fish, it can be nice to taste some other kinds of meat.

FISH
I love fish, so my favorite canned meat is Tuna. But, I also enjoy smoked kippered herrings too.

Tuna, with angel hair pasta, sauteed with some fresh or canned or sundried (and packed in olive oil) tomatos along with some fresh garlic and a dash of pepper (or pepper flakes) and a pinch of Herbs de Provence. Add a few sliced black or green olives. Add some "canned" in olive oil feta cheese. Think Mediterranean cuisine. Yumm! Hot or cold.

Chicken
(I usually buy the white breast meat in a can).
Soups, chicken tacos, burritos, enchiladas (use canned enchilada sauce with tortillas), and with pasta. Yum!

Roast Beef
I have bought the canned beef (usually packed in Argentina or Brazil) but have had mixed results. Some is very fatty, some lots of gristle, some lots of salty sauce. Not much good luck so far.

Shredded Beef
Recently a friend introduced me to some "Brushy Creek" brand shredded beef he uses for his lunch tacos and burritos. He uses his with tortillas (good for boats) with some cheese and salsa and canned jalapenos. I bought some, skeptical, and was pleased. This product iis in a flat plastic pouch. very easy to store. Simple ingredients: cooked beef, water, beef extract, corn starch, salt, caramel color. You can "boil in a bag" or microwave in the pouch. 6 ounces, enough for one person. I heated it, poured a little BBQ sauce on it, layered it on a big bun and had a very tasty "BBQ Beef Sandwhich." The texture was good (shredded beef) and there was no visible fat or bad things in it. I might have another one today. It was good. I will post a photo for you.

Re: Best Canned Meat?

I found the canned roast beef or Corned beef from New Zealand or Australia was great quality. Not sure if it is still readily available now though. This was years ago.
Yes going to the T&C's etc I would load up on stores big time. Take fishing/snorkeling gear!

When I was a kid in the UK we always had these when on boating holidays :

http://www.amazon.com/Fray-Bentos-Ju.../dp/B0051C0L92

It's a steak pie with puff pastry, in a can. Just remove the lid and bake. There's also a steak and kidney version for the British purists.

Re: Best Canned Meat?

Did some more research.

The Yoder's product line looks pretty good. see Yoders Canned Beef

A tad high in fats, but 12% salt.

Canned Chicken

Problem is that the beef is packaged in 28oz tins. So once you open it, you have 3-4 servings of beef.

Beef maniac does not post nutritional info. Although having "fresh" gator, or elk or bison sounds good.

Mark, I can assure that Fray Bentos pies tasted great when we were kids, but now?. Tried one a couple of years back, most of it went to feed the fish.

LOL

When I came back to the UK after a 20 some year absence, All I wanted was a pint of creamy Boddingtons.

Changed the worlds best beer recipe to a generic slop hadnt they?

Gutted and sad for weeks.

Re: Best Canned Meat?

Anyone found any canned meat that does not have BPA in the liner? I have only found sardines from Costco that specifically said no BPA, but others?

Albacore Tuna. Especially if you catch and can on the same day. Completely different than the stuff you buy in the grocery store. Also, cut and frozen into steaks.
Another vote for Spam, too.
