Another Reason to Make Your Own Bread

Newspaper today says major source of our sodium overload is store-bought bread and rolls. Salt is not required (except in salt-rising bread) so make your own and use half what the recipe calls for. You can also cut the sugar way down. You need just enough to "feed" the yeast, about a tablespoon honey or sugar.

I agree. Nothing like the smell of bread baking to make the boat homely.

Personally I never add sugar to the mix anyway, doesn't affect the quality of the finished product in anyway.

I do find storing the quantities of bread that we need a bit of a pain though! Not enough room on board for a large trash can which is what I really need so it has to be split into manageable lots and secreted around the boat.

and to make it even easier to get the right flour, I've just discovered that amazon.co.uk will ship bread flour to us here in Greece free of charge if we spend more than £25.

Saves trawling around the supermarkets trying to interpret which flour is which!

Don't forget to use iodized salt. With all the fancy kosher and sea salts we use (which are all iodine free) and our modern eating habits, iodine depravation with nasty thyroid problems as the result can happen more easily than one would expect.

I agree that the yeast does not need added sugar. Bread in the Americas is much too sweet for European tastes so I guess it is a matter of getting used to either version.
