BAsically, run withe wind (assuming you have sea room). I've been out in 40+knots sustained winds with gust up to 50 knots. Drop the main, reel in a good piece of the genua, put the wind over your shoulder and keep going.

This is in Baltic waves - which are normally short and steep. If you're having problems with the above, time to drop a drogue or warps off the stern.
