Pls recommend school/charter in Mexico/Belize

Hi! We are investigating retiring to a liveaboard. We would like to experience staying on a powered liveaboard (@ 50') for a week or so while getting some seamanship and handling training/experience. Any recommendations on a good charter company in Cozumel, Cabo or Belize where we would do overnights in the marina and have a training captain take us out during the days? Also, please direct on how logging is done and how/if this will be pertinent to our eventual boat insurance.
