What happens if your crew is refused entry

If you sail to another country and have a back packer on board who is refused entry when you arrive, are you responsible to take them back, you may not be able to take them back.

You are responsible to repatriate him/her. Usually on the first flight out.

At best, you will be required to pay for an airfare for them to leave the country.

I'm sure you'd be allowed to immediately depart with them aboard. Once you're out in international waters. . .

Depends on the country Dave. For example, if you were a yank arriving here and one of your crew was refused entry you are still lawfully entitled to enter and they may be held in detention. Like many things in life these are all best addressed in the planning stage. Firstly by having some form of documented agreement with the crew specifying their responsibility and or lodging a bond for air fare etc, secondly making sure they have a visa for your likely destinations, thirdly checking with the relevant countries regarding their policy.
