Hey Sluissa, how about considering a pole-out arrangement from the dock to gain those extra inches of water? The attached picture is an example as used on a tidal creek on the UK east coast at Saltfleet and manages a high tide range and storms without problem (although nothing like your gulf hurricanes!).
Very cheap to make, easy to install and in our case keeps the boats off the bank to deter unwanted visitors!

Alternatively, a bit of lumber and a few 5 gallon plastic drums would make a cheap floating dock extension.

Looking forward to the internal pictures when you have them as the boat looks great on the outside.
