So I'm a biologist and have recently come across the Walstad aquarium method. Basically requires a bowl, potting soil, aquatic plants, sand and a work light.
I've tested this method using a 4 gallon vase.
The bowl/aquarium cycled in 2 weeks haven't had to do a water change since. MEANING this can come on any sailing trip.
I've used it to keep a betta and nerite snail. And more recently 10 red cherry shrimp for about a month, which are surprisingly fun to watch and reproduce quickly.

Will a Betta get seasick if the boat is in a seaway?

No, get a round bowl or vase. The round container will limit the pitch.
Also an idea, if the betta is a pet you can rig a hammock similar to a planter hammock and hang it from the Bimini.

Having had fresh and salt water aquariums ranging from 50 to 800 gallons for the better part of 35 years I would love to see a video of the aquarium while the boat was underway.

Do you have a gimbal for the tank, or is there some way to keep the water in. I can't imagine the stress on the inhabitants while being sloshed around while underway...

The irony of carrying an aquarium aboard a boat is delicious.

I would just install a view port in the hull and call it done.

Maybe I've always done it wrong but my experience using a hammock type of arrangement if anything, exacerbated the problem with swinging on a boat under way. In theory it sounds good. Suspend something in a hammock hanging in the boat and the boat rocks around while gravity holds the hammock and contents vertical and still.

In practice when I tried hanging mini-hammocks in the galley to hold small fruits and vegetables when the boat rocked in a seaway the hammock just slammed the stuff around.

Exactly. When I lived in crappy little apartments in cities, I always kept them stuffed with potted plants (and aquaria.) When I finally moved back to the farm, I didn’t need any of those things any more because it’s all just outside the window.

And on the boat, there is the issue of transporting live organisms across borders...
