For what its worth we use a large old sail bag to store our garbage bags in. It can hold 6-8 full 29gal? Trash bags. Doesn't leak nasty stuff, and helps contain the smell a little. We can tie it to a lifeline to be out of the way.

Here is an idea for you, design a trash compactor, hand powered some kind of receptacle with a lever ram which can be used to compact paper, cardboard etc in some sort of bag in a receptacle, 10-15 gal or so, to be disposed of at the next port.
Once you have done that try to make a hand shredder or grinder to shred plastic water bottles the 16- 20 oz ones that take up so much space.
If you are successful you should make $$$$$

Keep in mind for all the talk about the horrors of throwing plastic overboard...

Its he rare cruiser who spends more than 10% of their time on crossings, so it's just not a major consideration (most spend far less). Most time is spent in harbors and marinas where access to shore side garbage containers is handy. In remote areas, burning it on a beach can be an option.

That's before you even touch the perception of having an incinerator onboard (yeah, mostly perception but from a marketing perspective hard to get over)
