I'm 6'4" and wish I had gotten myself bonzai'd as a teen... being tall made boat-shopping more expensive. The silliest moment was when an honesty-challenged broker was showing me something or other... I hadn't yet figured out that every time he opened his mouth, a lie came out. I stood in the salon, my neck at a 30 degree angle with my skull jammed against the overhead. "Um, this won't do," I said.

"Ah, no, mate, actually that's a good thing. In a seaway, you brace with your neck muscles and have both your hands free!"

Look at a Pearson "365" sloop or ketch. My sloop has 6'3 h/room. I'm 6'0 and have room to spare on settees and pilot berth.
