I love cooking dinners for special occasions. It was just me and the kids last night- Jody is still deployed- but I wanted to give the kids a proper Christmas Dinner anyway. The ham cleared the top if the oven by a hairs width only after I shaved the top to the bone! It was okay though- I needed some meat for flavoring the collards anyway! We also had homemade applesauce, fresh pineapple, stuffing, sweet corn, rolls!

Looks like a great spread. That's what Christmas is all about, kids and boat dogs of course!

Now for the leftovers, for b-fast: ham and eggs! For lunch: ham sandwiches! For dinner: pizza with cheese and ham toppings????

Ah yes!! Much as I love a turkey stuffed with chestnut one end and sausage meat t'other, a ham and all the other trimmings (have to have brussels sprouts as one of the green veg!) - Whoever has cooked it (self, wife, Mum or Mum-in-law); I've always considered that the Boxing Day lunch of cold meats, Bubble & Squeak, pickled onions etc, etc is a far tastier dish! Agreed, we had cold meats on Boxing day and then the leftovers and bones all went in to make Xmas soup, yum!

I wonder how many boats capsize due to overeating?!
