Some enjoyable things we used to enjoy as kids on boats:

Sailing, when going to meet other boats with kids on board we liked
Rafting up: one boat for the kids and one for the parents
Taking it in turns to be skipper for the day (I awoke to the title of "Bilge Kipper")
Any boating role that a kid takes to (mine was coastal navigation)
Respect and encouragement from parents for what they can do
Funny stories told about them at sea (not at their expense)
Any beach in any weather (improved by random meetings with other kids)
Hunts for shells, curios, BBQ wood, etc
Time & space on shore - to make our own chaos
Any routine stuff packaged as an adventure
Critters in rock pools
Fishing (Dad can do the scaling; Mum the cooking; us the eating)
Catching crabs with bacon rind
Rowing expeditions - with siblings / fellow fiends (the 'old man' did not do outboards)
Sailing dingies / tenders - for more adventurous expeditions
Playing (cards or anything) below in the cabin
Damning creeks (probably got damned a few times for this)
Wood fired BBQs - to cook evening meals on beach
Food treats in short supply at home (cakes, chips, etc, etc)
Most things that ended up with ice creams or fizzy drinks (on shore)
Aqua plane (a simple board towed on a rope, which I could dive like a submarine)
Bizarre stuff generally (sleeping in rubber dingy; Napoleonic ruins, etc)

It was a while ago.
Can't remember much ... but I do remember the happy times.
In part because my Dad was always particularly happy on boats ...
