No own bank account sounds an odd one to me (as kinda like making her a chattel / financially dependent on you), are sure it is an immigration law and not simply a local bank
rule? (no furriners!).
Anyway, am no expert of course - but I would have thought that if you can quote the Canadian law (and printout an extract) that says she cannot have own bank account that together with a covering letter would actually show she is someone who takes immigration law seriously. At the end of the day they mainly want to make sure she won't be staying or using them as a back door into the EU or becoming a burden (£££) from being potless........and they can only say no (PITA though that is). But if taking a turn up and see approach (I can see the temptation!), perhaps better not to have a refusal on her file?
Anyway, best of luck - am sure plenty of other folks (with spouses / partners) with different passport will be interested in how things go (paperwork and reality!).
