Aussies applying for Spain/Italy/French/Maltese Visas

Help Please.
Can anyone tell me where, cost, and how long to process long stay Visas for the above countries as shengen visa will be too short. Will only need say 60 days on top of our 90.
After research on France it appears Australians can only apply in person in Sydney with it taking between 10 days to 2 months to process (no passport in meantime) and no more than 3 months before arrival in France. Website says you cannot apply while in France, anyone applied for any of the above countries while in Europe or Australia? Havnt found a winter dry haul yet so not even sure which countries must be ruled out by visa issues. Running out of time as fly to Europe in 2 weeks.
