What cleaning products do you use to clean your boat (wood, gel, vinyl and sails)

We live on our boat and are cruising around the world. As such, the upkeep of our boat is very important to me and I have been trying various products in small quantities to do a variety of tasks. I wondered if boat owners out there would be willing to share what products and techniques they have found PARTICULARLY GOOD in maintaining thier boats?

I am also concerned about the 'long term effects' of using certain products ... may look good today but how will it look in the future?

What are the best products to protect against UV damage etc?
