You absolutely do not want to use regular plywood from a lumber yard as it is guaranteed to buckle and warp in the marine environment. Looks like you have your hands full, we are in the beginning stages of a major refit also so I am with you brother

The best plywood is russian burch,is for out door ,but the glue is superior than any marine plywood, i boiled and no plys come apart,the home depod panals that some one mention is rely pvc no fiberglass
