Not much to them, just some hunks of teak, tied together with solid elastomer cord...

My cleats have never posed that much of a problem for me, but after stupidly snagging a tether on a deck cleat one night while going forward on another boat, I became a believer in their value...

Well, not to be flippant, but I just loop them around or though the cleat... ;-)

Using dyneema, you can go with a rope diameter far smaller than your docklines, then simply attach as many additional lines to the loop as you desire... Another advantage, is that dyneema will be far less prone to any chafing issue that might arise...

The downside, of course, is that you are more limited in your ability to adjust lines on deck, as opposed to from the dock... If you want to be able to do that, you have to take a bit of care with the kind of knots you decide to use... ;-)
