I didn't know epoxy would accept varnish. Is there a trick to doing this or a specific product to use, or does it just soak right in?

Yes it will, but it must be sanded... and it fills paper readily. if I did this I would just do a seal coat of epoxy, not a thick coat. I wouldnt do it anyway though, unless you have a very wet environment and need to protect the wood.
