Most flue applications rely on airspace around the pipe. Your fitting that goes in the cabin top allows for that airspace I imagine. I would not use aluminum flue pipe. Any steel or SS of like wall thickness to the original specification should work.

You can easily rent a large holesaw, lowes , homedepot, tool rental business, won't cost but $10 for the day.
Don't buy, rent!

For the cost of a deck iron, navigator stove works, or shipmate stove works, will sell you a bronze moat type deck iron for the same price as the Dickenson SS version.
A much better deal and visually very appealing.
Cabin top curvatures some times need bevel rings to assure vertical alignment.
You probably won't be using the wood or diesel stove much, if at all while sailing.
Back drafting, issues.

Once your hole is close to the correct size, or needs a bit of "tuning", chuck a sanding drum into a drill with some coarse paper on it. Just make sure that you've got a system rigged for dust control, especially belowdecks, before you switch it on.
