Beneteau cabin wall liner

OK. I have finally ripped out the vinyl on my cabin walls. I have used a steel brush and vacuum to get of as much debris and adhesive as I can. I am looking to go with a lapstrake wall like in the main salon or maybe just a piece of thin ply. To do either I think I will need stringers affixed to the inside of the hull

Questions.

What type of wood for the stringers? It needs to be somewhat flexible.

Should I use 2 part epoxy to stick them or 3M 5200, or some other way I haven't mentioned?

Does anyone have a great idea on how to hold them to the hull while the adhesive is drying? I can only think of long sticks from the other side

Is a small air gap desirable behind the wall or should I fill with insulation?
