If you want to transport all that stuff -- maybe you should consider a suitable single-hulled boat.

Ok so the loaded displacement is 23,064 pounds. I found it in metric at the back of the owners manual.

Would a say 68ft monohull like a old Irwin 68 Ketch carry more then say
a 56ft Crowther Catamaran.

Check "Owners handbook". All weights of "standard"-extras are listed, and there is a sheet to calculate how much extra weight you can carry.

our is 8400kg - 18500 pound, and that is with all my toys half fuel tanks,+++++
holliday mode.

Empty... it is around 7260kg, and it can take safely load of 3200kg more.
Total is 10460kg =23040Pounds that is what the CE paper is saying.
that is class A offshore, (if you just stay along the cost you can load up more.)

So you are a bit overloaded yes.

better get a good crane to get your real readings..
