Best place in FL to charter (eventually own) a cat?

I've seen this question posted before, but I promise there's a bit of a twist this time.

Naturally, I prefer to deal with professional, courteous, helpful people and organizations. That's a given. But what I'm mainly interested in lately is the TYPE of sailing one can realistically expect to do in FL over the course of a week. IE., interesting itineraries ... with a bias toward quiet, serene beaches.

It seems like areas near Ft. Lauderdale might be ideal due to their proximity to the northern bahama islands. When I look at the western gulf coast, I don't see many places to sail to. It seems as though I'd have to start at or sail down the western coast until I got to the keys in order to have any real fun.

But all the above are naive perspectives. So I'm hoping some others can share their input, experience, and any other considerations.
