Using a retractable keel

Our previous boat had a fixed keel, but now we have purchased a larger boat that has a retractable keel. Is there any books or information source that provides information on how to use it to the best advantage? I am basically restoring it to the original condition. to date the keel has been removed and painted, the operating winch system has been updated, new S/S swing plated fabricated and replaced originals, new S/S rudder and post installed, new navigation lighting installed, and several other major repairs. I plan to return to Tampa this fall to complete the restoration and (hopefully) learn a little about salt water sailing.

Any suggestions welcomed.
