I'm going to step out on a limb here and recommend the Hobie 16. I did quite a lot of sailing on FJs, Flying Scots, and Hobie 16s when I was
learning to sail. The H16 was the most fun by a mile. The Flying Scots were great campers that you could load down with 500lbs of
gear and 6-8 people. The FJs... I never enjoyed. Couldn't carry any
gear, couldn't go as fast as a hobie, and were really unstable if the
wind was either too little or too much. I'm sure they're very good
learning tools, but for the types of sailing I was doing they just didn't do anything right.
Hobie 16s are a dime a dozen. You ought to be able to find one in sailable condition for $500-1000. Flying Scots are more expensive, but would also be a great bet if you've got a towing vehicle that can handle a bit more weight.
