Just look over those ideas on my Pinterest board and I am sure you will find something fresh and different and tasty, such as avocado wrapped in Prosciutto with goat cheese, or Avocado Fritters, or Avocado Eggrolls, etc.
Here is what I would do (in addition to those recipes) with a surplus of Avocado:
Guacamole freezes well. I would look for off-boat
freezer and freeze it.
Does not have to have the other ingredients of guacamole, simply mash the avocados and put in
freezer "zip loc"
storage bags.
Avocado is good on toast with butter (melted) and
salt and pepper (like a fried egg sandwich with no egg….or with egg).
Also good in scrambled eggs.
And, can be as a split avocado (remove seed) with an egg baked in the half of the avocado (baked/broiled).
Avocado and crispy fried (for texture) "American" bacon sandwich on toasted bread with some mayo and seasoning.
Avocado and tomato sandwich (on toasted bread with some mayo),
salt and pepper to taste.
Avocado with shrimp or crab meat (or grilled fish) and lime juice. I would try variations of this since you are on an island.
