All Cyclone Pam threads merged to here

Here in Vanuatu we're staring down the barrel of a slooooow moving Cat 5 storm and it's the peak of the avocado season. Last week in the market they were 10 cents for one about a pound and that's the expensive market!! So, the avocados don't last even a moderate blow and we now have enough of them to sink a battleship as all the trees have been picked bare before the weather hits.
The admiral does a mean chilled avocado soup and we love them just sliced on bread or cracker. Do any of you out there have any great ideas of what to do with nature's bounty? Guacamole is an obvious one but anyone got alternatives? Will reply for as long as we have power.

Problem is the power is likely to be out for a very long time. Does guacamole for breakfast lunch and dinner do anything styrange to your bowels?

Probably turns your poop green.

I don't know any way of saving them and have no idea how they freeze, if at all, but frozen guac is probably your best bet.

My favorite omelette is one with sour cream, salsa, and sliced avocado in it. Yum.

When I'm really lazy I take an avocado half and pour balsamic vinaigrette into the hole. No bowl or plate required.

No ties, Google on Avocado Ice Cream (if you can get some dry ice before the cyclone comes). I understand it's delightful. Never had it myself, but if you can find a recipe for it from Calif., give it a go!

I like to cook. I live in Texas now. I like Avocados.

Just look over those ideas on my Pinterest board and I am sure you will find something fresh and different and tasty, such as avocado wrapped in Prosciutto with goat cheese, or Avocado Fritters, or Avocado Eggrolls, etc.

Here is what I would do (in addition to those recipes) with a surplus of Avocado:

Guacamole freezes well. I would look for off-boat freezer and freeze it.

Does not have to have the other ingredients of guacamole, simply mash the avocados and put in freezer "zip loc" storage bags.

Avocado is good on toast with butter (melted) and salt and pepper (like a fried egg sandwich with no egg….or with egg).

Also good in scrambled eggs.

And, can be as a split avocado (remove seed) with an egg baked in the half of the avocado (baked/broiled).

Avocado and crispy fried (for texture) "American" bacon sandwich on toasted bread with some mayo and seasoning.

Avocado and tomato sandwich (on toasted bread with some mayo), salt and pepper to taste.

Avocado with shrimp or crab meat (or grilled fish) and lime juice. I would try variations of this since you are on an island.

Pat, while you are worrying about avocados, I'm worrying about you and especially all the good Nivans on Erromango, Tanna and Anatom. Looks like it will run right down the chain after just missing Efate.

I was just thinking probably better to take care of the boat and yourselves rather than worrying about preserving avocados. All the best of luck to you all on the island and in the storm's path.

We hauled the boat on Tuesday and she's tied down as well as can be. Bunkered down in a concrete house with shutters up already, even though the world not scheduled to end until later tomorrow. Jim, The southern islands are probably going to miss the brunt of the storm, Efate is going to be the worst hit on current forecasting. Thanks for the recipes folks, some delicious sounding stuff there aspeciall the egg and avocado thing.

Avacados are really a great food and you can eat as much as you can.

Chocolate mint avocado "ice cream" is pretty good!

2 ripe avocados
1/2 cup milk (almond, coconut, cow, goat, whatever)
3 tablespoons honey
2 tablespoons coconut oil
1/2 teaspoon peppermint extract
2 oz. dark chocolate, chopped or shaved

Blend and freeze!

If you can scrounge up enough mason jars you could can guacamole dip, no refrigeration needed. Print some cyclone-themed labels and sell on CF to offset your cyclone prep costs, etc. I'd be down to getting a few cans which would make excellent conversation pieces during our sundowners.

But the shipping costs would probably make such item prohibitevly expensive unless you get some kind of deal with the shipper, at least to AUS and NZ.
