Sailing Lessons For Girlfriend

I am a live aboard who is planning to escape New England and sail south in a few years. My girlfriend and I get along great and she knows my plans and is considering coming with me. Her sailing experience is limited to 4 days cruising with me last summer, a couple of day sails, and a 3 and a 10 day cruise this summer. She survived 10 days aboard quite well and we both feel it would be a good idea for her to get some sailing instruction. Looking for suggestions, preferably in the Westchester, NY or Southwest CT region.
