The Archipelago Sea is pretty pristine and one learns navigation.
Skippered charters available.

Check out a company called sailingholidays.com
They are based mostly in Greece and do flotilla & bareboat holidays.
If you don't have any or little experience and your partner less so, I would recommend a flotilla holiday for boosting your confidence.
You'll have lots of good advice, help and backup if you have any problems and it's up to you if you want to join the rest of the group in the evenings.
The days are all yours and you can sail off for one night or so by yourself if you feel the need.
I cannot recommend the company or the holiday highly enough and I'm not connected in any way to it.
It's a great way to bump up your skills and continue to learn as there's something new everyday. An added bonus is the Greek & Croatian backdrop, some stunningly pretty places.

I've Turkey as a suggestion earlier. If this something you are considering I would recommend you have a look at SK Yachting.com. A small charter operator offering well maintained and well prepared monohull and catamarans crewed or bareboat. They operate out of Marmaris and can take you into the Greek islands of Dodecanese. Marmaris is our home port, we are currently sailing Turkey and have been for the last 2 years. We know quite well SK Yatching as they maintain our ship. They are definitely people you can trust with a professional and personalize approach.check them out!
