Is it OK to mix different battery brands for my electric boat (ie Centennial and Trojan) - all of them are 6V ?

Its not a good idea at all.
They should be the same batts purchased and installed at the same time.
If not there will be lot of fighting between them.

Even if I only have to replace 3 out of 6 batts ?? Why do they all HAVE to be purcahsed at the same time ?

Because if they're all connected together as one bank the older batteries will drag down the newer batteries to their level and you won't have the capacity from the bank that you would have and long term you won't have the life that you would have if they were all new. If you must, you can pair 2 new batteries into a 12v cell but I'd never want to put an old battery with a new one in a pair.

Standard golf cart battery wiring. Hook the + from one to the - of another. The two unused terminals make 12v.
