New install.

I have 8 6v 140 amp hour batteries, what would be a good setup for a brand new install on a refitted boat.

Will need new charge controllers and input on wiring and battery switches

Was thinking two banks. 1 on each side of boat, with a switch to select banks. So i can alternate banks

i am installing all new electrical in boat and trying to plan out desighn and routing before i buy wire and other stuff.

Will be recharging with solar and wind power. Will need a charge controller that can handle both, or two controllers?

Any ideas on good wind generators will be appreciated

Keep it one bank and buy a separate start battery.
You'll want a battery selector switch and an ACR to keep the start bank charged.
All charging sources to the house bank.
Separate solar and wind chargers.

Sounds like you've got a lot of research to do. Good luck! It's my favorite job on a boat... you get to organize and label everything.
