Help me learn "normal" for my new boat?

I have a used boat, new to me. 4 solar panels up top, 3 Lifeline batteries. I've read on this forum about others' setups and challenges, but I'm curious to know what is right for my boat.

Batteries are Lifeline AGM 210AH x 3, installed 8/15.
Solar charger is a MidNite Classic.
There is also a Bluesky panel, which I think is leftover from a previous solar setup, but perhaps now performs a monitoring role?

Battery gets to a float mode on sunny afternoons, but how do I know if the bulk/absorb/float settings are right? How do I figure our SOC using the current equipment? The boat has sat on the hard for a few months, so I assume I need to equalize, but how do I know for sure?
