How should lead acid batteries be place in a sailboat? Lengthwise running fore and aft?

Doesn't matter. Either way is fine.

position of Acid Batteries depends of the different type

Conventional:
Pole side up.
Need to be vented
Toxic gas emission when charging (do not store in berth)

AGM:
Any direction
No emission of toxic gaz

Gel:
same as AGM

All batteries have to be secured to their location with strapping material

.... not that there is anything wrong with it.

Note that this isn't true. If you charge AGMs and gels at voltages that cause gassing in flooded cells you will get releases of gas. In practice. Flooded cells give off little gas and are often stored under berths. ( 1000s of beneteaus can't be wrong). Hydrogen gas rises and disperses very quickly.
