Alternative / Innovative Out of the box energy storage?

Here's a smaller predecessor to the current version that came out of a 2012 Leaf for $2,600. If I'm doing the math right this works out to about 1000 Amp Hours at 12V and it only weight 210 pounds. How would one go about making this useful in a 12V system?

What about a freezer with two thermostats. The first ensures the freezer stays below some upper limit. The other driven by excess energy, drives the freezer down as cold as possible. That way when the exess energy goes away it's a long time before the freezer kicks back on.

That's an off grid solar trick :-) Putting fridge thermostat on freezer and using as fridge is another, Better efficiency,
