Where and how is the correct way to install plugins on mac?
The documentation needs to include this.

How to install plug-ins depends on the browser. See the Help information for your browser.

I guess he means OpenCPN plugins and not Browser plugins.
Mac OS X holds all files in a bundled app. Right-Click your app in Finder and open "Contents". There you will find the PlugIns directory among others.
