New to forum - Some direction

I own a small 21' OF CC and I want to use a Panasonic Toughbook for my MFD for all my needs:

Entertainment (I got this one worked out)
Sounder (Hardware/Software?)
GPS/Plotter (OpenCPN?)
NMEA Gauge (Hardware/Software, pretty GUI)
Engine Diags (Etec Software?)

Can you guys point me to the Hardware/Software I am going to need to accomplish this. In the future I plan on attaching a Sunlight readable touchscreen to the Panasonic.

You can try it by simply downloading and burning to a CD, or to a USB-stick, and booting onto it.

I have access to several dual core factory refurbs for 200-300 dollars with and wo touch screen. I will try and load the Navigatrix OS CD onto it and see how I like it.
