I can see no reason why this technology could not be transferred to leisure craft electronics. It is mostly a question of software.

Did look up "Kockums Steermaster" and in principle could be useful. It appears the adaptive control for large ships was made to save fuel and handle better in quartering seas. The quartering seas and dead down wind are the challenging for most boats. The variability of sailboat under bodies and their relatively light weight (compared to cargo ships) would make creating the software interesting to say the least.

We had discussions of a true learning AP a while back and I know Sean is currently working to make the pypilot more adaptive. Sean is passionate about his work and if anyone can do it, he can.
