Re: Important things we don't talk about much

We use a Bialetti Brikka stove top espresso maker and a ss milk frother. The Brikka is easy to use and easy to clean. Ours makes enough to fill 2 8oz mugs after you add the frothed milk. It's not a steam frother - you heat the milk in it and place the screened agitator top and pump a few times. Makes a nice cappuccino. We only have used it dockside or at anchor. I will have to make a cage to stabilize it when underway. Takes about 5-6 minutes of propane fuel each day, including heating the milk.

I'm sure glad I don't drink coffee as complicated as the posters here are making it sound. But then it's obviously very important to coffee drinkers and appears to be a challenge to get the perfect coffee on a boat.

60ml of hot water is not a "long coffee" - which is the way I drink it. At 20 seconds for 60 ml. you are still looking at over a minute and a half for my 300ml mug.
The Nespresso machine does not make 300ml steaming mugs of coffee. That's not what it's about, and that's not "long coffee" in barista parlance. The long coffee button on the Nespresso device gives you 110ml, and still takes -- yes, seconds. About 40, to be exact. For 110ml of sheer deliciousness delightfully combined with caffeine jolt. Why the irresistible impulse to quibble at all costs?

yeah I looked back and saw that even I mentioned it once

I suffer from "craft" so even though I started this thread maybe it didn't get enough attention to make a brain take.

Hell I've had the urge to fly to Spain lately just for a good cup!

Re: Important things we don't talk about much

Hi there, I really enjoyed my first visit to your forum, clearly you enjoy.

I would like to hear what people use for pots and pans in their galley. I plan to live aboard. Should I keep my nice cast iron? Will it rust?

You had me at coffee.

Bobby,

I love our titanium cookware (we got it at a boat show).

Also, recently, we bought some very lightweight versatile plastic cookware for the microwave at Sur La Table. One piece we use a lot is the Lékué Microwave Omelet Maker. What we love about it is the cleanup is much easier because nothing sticks. It's foldable, squishable and bendable, and extremely lightweight so it's ideal for storing on our sailboat.

I also chucked my aluminum Moka coffeepot because I didn't want to ingest aluminum that might be bad for my health over the long run. Instead, I bought a small stainless steel pot that operates the same way - put it on the burner and water below percolates through the coffee into a resevoir above, and I love it.

I also got a stainless steel pump-action milk frother. Love that too.

Last suggestion: get the small thermos drink cups with the tops that you have to press for the liquid to come out the hole. We got ours at Target. We use them to keep hot drinks hot and cold drinks cold, and they last that way for hours. These have become something we use daily, and pretty much the only drink container we use, unless we're having wine or beer.

Good luck!

I love my cast iron. If you already know how to properly care for cast iron then you don't have to worry about rust. Seasoning is about keeping the air away from the metal. Salt and water don't cause rust, but they do catalyze it. If you keep your stuff seasoned and oiled properly it will out-live your great grand children whether you live on boat or land.

I prefer olive oil for seasoning and oiling. I know there are supposed to be some better choices like flax, but to be honest the olive oil behaves the best and gives the most consistent results.

Oh the pieces I can't live without are 10" and 8" skillets, 8" griddles, 5 quart Dutch oven. That's my cast iron lineup.

Re: Important things we don't talk about much

Cast Iron is a Southern thing, people that know how to season it etc. love it for it's even heat distribution etc. I remember in a Boy Scout trip forever ago, we were all cooking on the camp fire with our fancy aluminum mess kits, but it wasn't working very well as the aluminum just wasn't getting hot enough. My Father brought out the big old cast iron skillet and cooked for us all.
People that don' t know how to care for cast iron, hate it as every time they put it in the dishwasher it rusts.

I'd definitely keep the cast iron

Cast iron in a dishwasher? SACRILEGE!!!!

I love cast iron - problem is, my petite wife is not a fan of the weight.

As for it being a southern thing - I didn't know that. I have chefs in my family and they would use nothing else. My brother has certain pans dedicated to cooking certain things. Woe be unto the person who uses his egg pan to make hamburgers.
