Eutectic refrigeration problem

Hello everyone.
I am in a desespared for help to get the freezer an refeer working with the new compressor installed. At first I did not know enough about eutectic refrigeration system so i tryed to cool the boxes as usual as with an air handler. After few trials i found out that it is not the way it work, so did a little reseach i now I think i have a better understanding.

So let say the freezer plates are 6 degree design, according to Grunert I have to freeze them at 5 degree less. I am using R404a so i set the pressure at around 25 psi for -10 degree. I learn that i have to monitor the plate temp but I have trouble to bring it down that low. I have to say that I am using a cheap IR gun which i lost trust in it but... I ordered a magnetic pipe thermometer to compare but I dont have it now.

Is there anyone who can help me please.
