You don't need to go overboard. a small air cooled system is fine. The more insulation the better.

Air cooled refrigeration works fine as long as you aren't concerned about power consumption in tropical waters. We have dozens of customers who have communicated back about the significant reduction in power consumption in the same box after an upgrade to water or keel cooling. At 18 watts per square foot of solar (optimum) you can save a lot of money on the size solar array needed to augment refrigeration consumption.
