Coastal Pensacola to Panama City FL

We are getting ready for a coastal jump from Pensacola to Panama City. The direct course is about 97-degrees and 81 nm. Is there any advantage to following the safety fairways as shown on the US chart 11360? My thinking is that that's where all the big ships will be and it might be safer as well as shorter to go direct. Requesting forum wisdom. Thanks.
