best bet is to find a morrocan agent to act on your behalf who speaks english.
do you know which port you want to use,ie where are you now,safi and agadir are the closest to the canary islands.

all port contact info is on the net,a pilot book will only give sailing directions

A bucket and some divers will do it. We put a transducer into an RN Fleet tender Bibury one afternoon.

Place expanded foam pipe lagging around the rim of a strong plastic bucket and tape on. Place echo sounder in bucket and sink under boat. Divers temporary tie bucket against hull in the right spot. Brave individual drills small hole to check alignment from the inside. Divers adjust if necessary. Once in the right place drill bigger hole for transducer from the inside. External water pressure holds bucket on and in place now there is a hole in the hull. Use metal coat hanger to fish out transducer cable through the hole into the hull. Fit into place and tighten down on sealant. Divers pry bucket off hull. Go sailing.

Whichever port is cheapest! Can't find contact details for Essaouira.

Essaouira.
has only 1 slip way of 100 tons and is very small would not reccomend it
it is mainly a tourist town
agadir or safi are big fishing ports,with the assoc industries.

agadir is your best bet,as it has a 500ton travellift.,plus 5 x200 ton slipways.

i would expect it to be iro euro 600,and 20-30 per day in the yard.
i still think the cheapest option would be to do it between tides if you can find a wall to lean against,with 3.4 meter tides at springs you should have at least 4-6 hours per tide to work on the hull.

Oh dear, more expensive than the top yard in the Canaries!

I would need to dry out the hull [2 inch oak] in order for the sealant to stick which takes at least one day to set. At 2.5m draught I would have very little time.

if you have never been to morrocco i would reccomend doing it in a spanish yard,or wait till you get to brest,where the tides are even bigger,up to 7.5 meters.
on a spring tide you would have a week more or less dried out during the cycle.
