Advice needed on Goiot 2 speed manual windlass

I am considering buying a used Goiot 2-speed manual windlass for my 40ft , 10 ton yacht. I'm thinking about the manual as opposed to an electric windlass for reasons of simplcity and reliabilty. My question is: How quickly do these windlasses recover the chain? How much chain per stroke of the handle?
Regards.
