Food-Safe Finish for Refrigerator Box

Hey kids, I'm building a fridge box for Hello World. I've finished the fiberglassing on the interior. I was planning on using epoxy mixed with white pigment to finish the walls but it's not going well. Does anyone have a better recommendation on a food safe finish that will adhere to cured fiberglass? FWIW, I used epoxy in the layup. I'm assuming gelcoats are out. Is that true?
