Depends on the sail of course. Laminates probably like to be rolled and I roll all laminates foot to head and don't fold.

On Dacron I prefer to flake.

Lay flat, take 24 inch bites from luff and leech, work from foot to head, then fold ends to middle and one final fold.

When remounting a flaked sail you unfold, lay it on the boom attach head, tack and clew and then hoist. This is for loose foot main of course. Minor modification for bolt rope foot is threading the foot in and attaching clew to outhaul.

The folding method above requires unfolding all the sail on deck to install, it appears.
