In our case, it was a microscopic crack in the hot water line not far from the hot water tank. This with the Whale Quick Connect hard plastic piping.

The resulting spray, almost an atomised mist, was just enough to trigger the water pump occasionally (a couple of time a night, which is when we noticed it) but not enough to leave a huge amount of water in the bilge.

We eventually found the leak in a remote area, due to the very small pool of water that was trapped in a corner of that locker. Suggest you trace all piping, starting with the hot system, looking for a similar tell-tale.

Good luck with the detective work!
I had exactly the same problem also near my hot water heater in hard tubing. Only found the mist because I was doing something else and my hand passed across it and then felt damp.
