Maybe copper or CPVC would be better.

I appreciate the feedback but copper pipe has no place on my
boat. CPVC may be useful in the
bilge or for black water but not for my
drinking water.
2. Lead free versions of PEX is available. In any case, new
legal standards were set back in 2014. Heck, its
legal in
California, where farting is illegal.

3. The Chlorine issue is due to percentages greater than 3%. They
solved this issue by adding antioxidants to the tubing, which are supposed to last 50 years I think. Besides we are adding a
water maker later in the year so we won't be using Chlorinated water for much of our water supply. What is left will come from a muni supply that falls under regulated percentages.
4. We are not using brass fittings.
In any case, the failure rate is very low. The newer PEX is far better.
